Other • How can I specify a wifi connection in a script to be applied on the next boot?

I am creating a kiosk setup using FullPageOS. I'm writing a script that will be used to provision a raspberry pi to be sent out to a site to be used.

The planned process is as follows:

1. An SD card is imaged with FullPageOS using the Raspberry Pi Imager. The hostname, username are set in the options, and the Wifi is set to the wifi in our office. Once it's done, one of the members of staff will put it into a Raspberry Pi 5 and turn it on.

2. The member of staff will then SSH (over wifi) to the device and download and run a script to provision it for that site. The script asks them a bunch of questions, including the username and password for the target site's wifi. Once done, it shuts down.

3. The Raspberry Pi is packaged and sent to the site. They plug it into a display, and hey presto! it works.

The part that I'm not sure how to do is set the wifi for the next boot. There are a number of tutorials for how to do it for the first boot, by changing the files on the SD card directly, but in this case we would ideally like it to be our wifi initially, with the provisioning script setting the wifi for the next boot.
